The Christmas holiday is approaching, and family dinner is decorated with a Christmas table on this day. Lovers of traditions, like the New Year, pay great attention to the January 7 menu.

In this blog, we will discuss what dishes should be on the Georgian Christmas table and we will share with you the method of preparing the traditional Georgian Christmas and New Year crowning sweets, Goziak.

The Christmas-New Year table is based on Georgian tradition and hospitality. Boiled meat, Georgian Sacivi, pork, Khachapuri and Lobiai, Mchadi, Gozinaki, Georgian salads, and a variety of Phkhali. However, unlike the New Year's table, as a rule, the Christmas table is less crowded.

The main component of the Christmas Mayo is the post-fast opening dishes. Most importantly, the table is always decorated with a bowl of Georgian Sweets, which consists of honey, nuts, dried fruits, and Felamushi. In the menu of Georgian Christmas desserts, we often find churchkhela, Felamushi, Tklapi, jams, seasonal fruits, dried fruits, and, most importantly, Goziaki.

Preparing traditional Georgian Goziaki is quite time-consuming, even though it consists of only two ingredients.

To prepare Gozinak we will need:

Walnuts - 4 cups

Honey - 1.5 cups

Roast a white, healthy walnut on the fire, so we empty the ash and crush it by hand. Place the honey in a thick-bottomed pan or pot on a slow fire and when it foams, remove it from the fire for 10 minutes, then put it back on the fire and cook, stirring constantly with a wooden spoon. Boil it like this 3-4 times. Then we add the melted walnuts, mix well, and cook on low heat for a few minutes until the walnuts turn golden. Then we will take it out on a board, which we will pre-wet with cold water. Then we distribute the walnut mass with a wet rolling pin over the entire board. We can make it with unroasted walnuts. The main thing is that the honey should be thick, new Honey fli is thin and needs more fermentation.

And remember to light a candle in the window on Christmas Eve to face this magnificent holiday with a bright heart. Vestel Merry Christmas and New Year!
